Vegan cinnamon sugar muffins are also affectionately called doughnut muffins in our house because they are melt in your mouth delicious!

These vegan muffins are simple to make with ingredients you probably already have on hand in your kitchen. I love make these easy muffins for a vegan breakfast option. My son LOVES anything that is a muffin and this recipe is one of his favorites! He also is a huge fan of our cinnamon cucumber muffins, which are a great option to sneak vegetables into a muffin! For this muffin recipe you will need these ingredients:

  • Flour
  • Brown Sugar
  • Vegetable Oil
  • Cinnamon
  • Applesauce
  • Maple Syrup
  • Almond Milk

How to Make Vegan Sugar Cinnamon Muffins

This recipe is easy to make! I love to use this recipe for vegan breakfast meal prep. They are easy to put together while I clean the kitchen after dinner and then they are ready for a fast breakfast in the morning.

I love that this vegan muffin recipe is made all in one bowl! That’s right, no need to get two bowls dirty. I love when a recipe is efficient!

Start with placing your flour, baking powder, salt and cinnamon in a bowl. Add in your brown sugar and remaining liquid ingredients. Stir until just combined.

Pour into your prepared muffin pan and bake!

When there is only two minutes left, sprinkle your sugar and cinnamon mixture on top and bake 2 minutes more to crystallize your sugar cinnamon topping!

Easy peasy muffins for breakfast!

How to Serve and Store Muffins

These muffins are best fresh right out of the oven or the next morning. They will keep on your counter in a covered container for 2 – 3 days. After 2 – 3 days, I would then move them to be stored in your refrigerator.

You can also invidually wrap each muffin and store in a freezer bag! Then just thaw and reheat for a delicious vegan breakfast.

Cinnamon Sugar Muffins

Ready in under 30 minutes for a breakfast treat or afternoon snack!

Ingredients

  • Ingredients:
    1 + 3/4 cup all purpose flour

  • 1 TBSP baking powder

  • 3/4 cup brown sugar

  • 1/2 tsp salt

  • 1 tsp ground cinnamon

  • 1 cup unsweetened applesauce

  • 1/2 cup almond milk

  • 1/2 cup vegetable oil

  • 2 TBSP maple syrup

  • Toppings:

  • 2 TBSP sugar

  • 1 tsp cinnamon

Directions

  • Preheat the oven to 375 degrees.
  • Combine flour, baking poweder, salt and cinnamon.
  • Add brown sugar, apple sauce, almond milk, oil and maple syrup.

  • Place in muffin pan and bake for around 18 minutes. Pull pan out and sprinkle cinnamon sugar mix on top then place back in oven for another 2 minutes.
