A little fact about me. I am a routine person.

SO routine.

Like I inwardly freak out if my routine gets messed up. I say inwardly because I am not so routine that I can’t adjust – just please give me time to think about it and wrap my mind around it!

So how does routine fit with overnight oats?

Well, for many years now, I have ate some type of oats for lunch. I am not sure how this started even. Maybe when I started making my Banana Oat On the Go Breakfast Bars. And I had two small kids and life was crazy! And lunch was fast and a blur (until nap time!)

So, oats are great. They are filling, full of fiber, contain antioxidants and lower cholesterol. And some even say one of the healthiest foods you can eat (well at least this website claims that).
 
 
But as much as I love oat bars – I could never really get used to eating oatmeal. It just didn’t taste great to me.
 
Then I was introduced to overnight oats.
 
AND wow. They were awesome.
 
 
SO SO good. And so many ways you could eat them. And the toppings. Well, that is my favorite part. You can top them with so much!
 
Coconut Chips
Chocolate Chips
Granola (oats on oats anyone?!)
Puffed Cereal
Sliced Nuts
Dried Berries
Peanut Butter

Well that list could go on for days! I really like toppings. I think my favorite thing though is you can make them ahead (yes, the overnight part!). And if you make the portion large enough, you can have it for a few days. All ready to go.
 
For Breakfast.
For Lunch.
Maybe even For Dinner?
 
So what is special about orange creamsicle overnight oats and why will you love them?

Did you ever have these creamsicles when you were a kid? So yummy, right?

Well these Creamy Orange Creamsicle Overnight Oats are reminiscent of those orange tasting popsicles. But unlike those popsicles, this is good for you!

So what are you waiting for? Grab a bowl or mason jar and get makin’ some overnight oats!

 

Creamy Orange Creamsicle Overnight Oats

Course: Breakfast

Creamsicles in the form of oats! Vanilla and orange combine for the perfect breakfast.

Ingredients


  • 1 1/8 cup Old Fashioned Oats (I used gluten free)

  • 1/4 cup vanilla plant based yogurt (I used Silk brand)

  • 3/4 cup unsweetened almond milk

  • 3 Tblsp fresh squeeze orange juice

  • 1 – 2 Tblsp pure maple syrup

  • 1 – 2 tsp orange zest (depending how orange tasting you want it, I used 1 tsp)

  • 1/2 tsp pure vanilla extract

  • 1/4 tsp salt

Directions

  • Place all ingredients in pint size wide mouthed mason jar, top with lid and give it a lot of really good shakes to combine all the ingredients! You could also stir them together – but I prefer shaking!
  • Place in fridge overnight.

  • Enjoy the next day with your favorite toppings.

Notes

  • I sometimes warm mine up a little! They are good cold or warm!
