Light, gingery, lemony and with avocado which adds a vegan creaminess like no other veggie can – in my opinion. 5 ingredients makes this vegan no oil added dressing easy to make. Just put all ingredients in the blender and blend until smooth! You will have a avocado ginger dressing just like that – so easy!

At first taste, you might think this tastes very gingery – so if you feel that way, let the dressing rest for a few hours – up to 24 hours – and by that time the ginger has become less overwhelming and everything has time to chill nicely for a perfectly light lemony with a touch of ginger avocado dressing!
I created this bowl for topping my asian inspired bowls with like this Asian Grilled Vegetable withs Miso Vinaigrette – but it would also make a nice dip for vegetable kabobs or even a light salad dressing with some toasted chickpeas or crunchy almonds.
Adding lemon juice gives this whole food plant based avocado dressing a little ‘shelf life’ in the refrigerator but due to the nature of avocados browning quickly – I recommend eating or freezing within 5 days.
Yes, you can freeze this! I love freezing my avocado dressings in small freezer safe containers and then thawing to add to a bowl. A word of caution though, do not microwave this when thawing! A warm avocado dressing does not taste very good! Let sit on your counter for a few hours or in your fridge all day. If you forget to put it out to thaw (which I always do) I microwave in 10 seconds increments and keep a careful eye on it!

GingerAvocado Dressing
Ingredients
- 1 ripe avocado
- 1/2 cup unsweetened plant based milk
- 1/2 inch of fresh ginger
- 2 Tblsp lemon juice
- 1 – 2 garlic cloves, minced
- 3/4 tsp salt
Instructions
- Cut 1/2 inch of ginger, peel and chop into small pieces.
- Place all ingredients in a blender and blend until creamy.
