Holy Moly, I could eat every one of the puddings in this book by Emily at Pretty Pies – like pronto.
 
Some sort of thing called my conscious is holding me back though… (darn that little voice).
 
But I just don’t want to eat the puddings but also these recipes too:

  • Flourless Cookie Dough
  • Cake Batter Dip
  •  
Perhaps it would be acceptable to have the Vanilla Latte Cashew Cream Pudding for breakfast, the Green Goddess Avocado Pudding for lunch and then end the night with the Midnight Mocha Avocado Pudding. Sounds pretty well – rounded to me!

[Pretty Puddings Ebook Review] Vegan Peanut Butter Cup Avocado Pudding

Course: Dessert

Ingredients

  • 1 avocado
  • 3/4 cup coconut milk
  • 1/4 cup natural peanut butter – heaping
  • 1/4 cup cacao
  • 1 tsp vanilla Sarah
  • 30 drops Sweet Leaf Vanilla Creme Stevia drops (OR 3 – 4 TBLSP pure maple syrup)
  • Generous pinch of Himalayan pink salt

Instructions

  • Add all ingredients to a food processor
  • Blend smooth, scraping down the sides as needed
  • Taste and adjust for sweetness and peanut butter flavor
  • Chill for 30 – 60 minutes
