Tis the season for everything pumpkin spice and everything nice, right?!
 
The season is brief though. Huge Sigh.

I saw Christmas decorations at the store the other day! Every year I am amazed how the Holiday retail season gets earlier … and earlier … and earlier.

Pretty soon I am sure there will not even be school supplies on the shelfs in the fall.
 
It will just be Christmas decor.

I love Christmas…but I also like to give my other holidays a chance of survival too!

So let’s celebrate Pumpkin season!

And I can’t think of any other better way to do that than by making this yummy Pumpkin Pie Smoothie Bowl.

Or maybe we should make this Apple Pumpkin Soup with Chipotle.
We could just have pumpkin for every meal. And that would be okay, because it is a super healthy food.

Low fat. And contains loads of Fiber and Vitamin E and a bunch more good stuff (you can read about it here)

So let’s just get to making the Pumpkin Pie Smoothie Bowl, shall we?

Pumpkin Pie Smoothie Bowl

Thick creamy and perfect for breakfast.
Course: Breakfast

Ingredients

  • 1 cup dairy free vanilla yogurt
  • *3/4 cup pumpkin puree
  • 2 Tblsp peanut butter powder
  • 1 Tblsp chia seeds
  • 1/2 Tblsp pure maple syrup
  • 1 frozen banana
  • 1/4 t. pumpkin pie spice
  • pinch of ginger

Instructions

  • Put all ingredients in blender, blend until smooth.
  • Top with gluten free granola, coconut chips, goji berries, pecans, rice puffs.
  • Enjoy!

Notes

  • *I used a sweetened dairy free vanilla yogurt and did think it was a bit on the sweeter side! You could use 1/2 cup of unsweetened dairy free yogurt and 1/2 cup sweetened dairy free vanilla yogurt. If you opt for a full cup of unsweetened dairy free yogurt, I would add 1 – 1 1/2 Tblsp maple syrup and 1/4 t. vanilla extract. The best thing about smoothie bowls is you can make them uniquely yours!
