I am only including mention of this crazy time of Coronavirus because someday when this is all over, I will look back and say, ‘Hey remember that time I put together a throw together vegan meals idea post because we were in isolation from a crazy pandemic?’. We had to rely on vegan pantry staples, sheltering in and social isolation.

Times are bit crazy and it seems somewhat as I am living somewhat between Diary of Anne Frank hiding out from people and the TV show ’24’ where we are running against the clock to solve this crazy outbreak. It really is interesting times, but at the end of the day we all wonder, what can I make at home to eat? Because we still need to eat now whether that is out of hunger or boredom, I am no longer sure!
