Homemade mac ‘n’ cheese was a staple in our house growing up. We would make huge batches of this cheesy baked pasta dish to have on hand for weeknights.
Of course, at that time of my life we used cheddar cheese, Velveeta, milk and butter. All of which don’t really have a place now in my plant based kitchen.
If you follow this blog, you will know that my family has agreed to also eating plant based 1x a week. The struggle though? Finding familiar dishes that would fill them up and win them over to the plant based lifestyle.
