I know Chai – but its summer, isn’t that a warm spice for the autumn?
But even in the summer sometimes a nice bowl of popcorn sounds delicious. And how about this vegan chai spiced popcorn? Yum.
Warm to the taste but it’s not a hot food…so I stand my ground that it is okay to have Chai in summertime!

I really do think a little sweet treat like popcorn is the best! Crunchy baked dessert popcorn can last for weeks if stored in a cool dry place.

12 cups air popped popcorn
1/4 cup coconut oil 14 cup brown sugar 1/4 cup agave
1 tsp baking soda 1/2 tsp vanilla extract 1/2 tsp salt 1 tsp cinnamon 1/4 tsp cardamom 1/4 tsp allspice
Air pop your popcorn and place in large bowl. Bring coconut oil, brown sugar and agave to boil in small saucepan on stove. Boil for 3 – 5 minutes, stirring constantly. Remove from heat, stir in baking soda and vanilla. (watch it sizzle and thicken up!) Stir in remaining spices. Pour mixture over popcorn and stir well.
Spread popcorn on a large parchment lined rimmed baking sheet. Bake at 250 degrees for 45 minutes stirring every 15 minutes.
When done, spread out to cool on wire baking racks.
Store in an air – tight container in a cool dry space.
